Located in the quiet town of Hino in Shiga Prefecture, Ramen Shiojan (塩醤) is a cozy neighborhood ramen spot offering three types of ramen: shoyu (soy sauce), shio (salt), and tantanmen (spicy sesame).
This time, I tried their shoyu ramen. Though light and not oily, it’s packed with depth and umami. The broth has a delicate balance—rich in flavor without relying on fat—and the noodles are chewy with a nice texture that complements the soup.
Interestingly, like other shoyu ramen I’ve had in Shiga (including one in Hikone), this one had a sweetness and depth that might come from the high-quality local soy sauce. I really enjoyed it.
